Berry Blue and Lemon Yellow

I had a recent request to paint a yellow and blue motif for tableware; a classic! Somehow my mind turns to food even in my painting, so immediately I thought of blueberries and lemons.
Yellow & blue, lemons & blueberries; classics!
We've been picking blueberries for over a month now, and the bushes are still producing gallons of gargantuan berries. Luckily, freezing blueberries is a cinch and they make a welcome treat in the middle of winter. Still, fresh is best.

We have over 50 blueberry bushes and
one lonely huckleberry bush
Whether it be a handful of pop-in-your-mouth goodness straight off the bush or pies, cobblers and salads, we never tire of eating them. But, I digress. Back to yellow and blue.

So, I painted these lemons and blueberries and off they went to my agent who performs miracles on the business end so that I can have fun on the creative end.
From the original sketches to the finished paintings, thinking continuously of the fruit gave me quite a craving for those classic flavors. I reconstructed an old blueberry muffin recipe and the end result was a lemon-blueberry muffin that is delicious; not too cake-like, yet not too heavy; loaded with sweet berries.


I wish that I could sit over a cup of tea with you and share them, but since I can't, here is the recipe for you to try...
INGREDIENTS for 12 LEMON-BLUEBERRY MUFFINS:
2 C flour
2/3 C sugar
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
8 ounces yogurt (I used lemon)
1/4 C olive oil
1 egg
1 tsp. lemon juice
2 tsp. lemon zest
2 C blueberries

Preheat oven to 400 degrees (F.) Spray 12 muffin tins with Pam or line with paper liners. Stir together first 5 dry ingredients. Make a well in the middle of the dry ingredients and place the rest of the wet ingredients in the well. Stir all of the ingredients just to blend; do not over-stir. Fold in the berries. Spoon the batter into the muffin cups. Sprinkle the tops with course sugar (optional) Bake for 20 minutes or until an inserted toothpick comes out clean. Cool for 5 minutes before removing muffins from the tin onto a wire rack.

What a nice layout of the blueberry muffins with the blueberries! That is so colorful and inviting. I love lemon cakes and I also love blueberry muffins so the combination should be delicious! Oh, wonderful artwork too Nancy :O )
